今日はゆで卵の蒸し時間についてです。正しくは「ゆで卵」でなく「蒸し卵」。
せいろで蒸し卵はとてもおいしく上手にできます。私は木のせいろで毎日なんらかの蒸し物（多くやご飯の温め直しや野菜蒸し）をするので、卵も同時に蒸して醤油やみりんに浸けて冷蔵庫にいれておくのです。4～５日は持ちます。朝も昼も夜も簡単なおかずになります。私は柚子胡椒の食べるのが好き。
私の蒸し卵の正解は、黄身が半熟でちょっとどろっとしているもの。
何分蒸したらいいのか、はかってみました。
できあがったのがこちらです。
単なるゆで卵として食べるなら９番。片茹で卵なら１０分くらいは必要なのかなあ。
でも８分は黄身の外側はちょっと固まりすぎる。（私の理想には）
５分は全く黄身には火が入っておらず白身だけがかたまった状態。
６分は黄身の外側がいい感じに固まり始めてはいるんですが、中のどろっと間が少ない。
う～ん。う～ん。
どろっとさせるために、高温でなくふわっと熱を入れるため、
火を止めて２分ほど待つことにします。
８分蒸して、火を止めて２分
６分蒸して、火を止めて２分ならどうかな。
うわー、ばっちり。これです。これこれ。
６分蒸して２分余熱がばっちり。

やはり火を止めて数分待たないといけないんですね。余熱でどろっとします。
おそらく２分でなくても余熱なら3～４分おいておいてもよさそうな気がします。
実験するとすっきり。
